Love, Blondie | Life Update Series

Dear Reader,

Yesterday I made pumpkin pie from scratch for the first time! I’ve wanted to make it ever since I read about Laura and Mary helping Ma make it in the Little House books when I was little. I’ve been planning to make it ever since we bought the little pie pumpkin in the beginning of October and I was super excited to finally have time to make it.


The recipe I used said that it would take about 3.5 hours to make, but it ended up taking five… oh well. It was really rather easy, but I can understand why people don’t usually make it from scratch because it takes a long time to bake the pumpkin.

I’d have to say that my favorite part about making the pie was the filling. My least favorite part was the crust. But I think that’s everyone’s least favorite lol. This was my first time making crust myself, but I don’t think I’ll be doing it again. The crust would not roll out into a good shape! I redid it so many times, and added so much water and flour to it, that I ended up having to throw it out and use the other half of the dough. At least I didn’t have to remake it, though; but it was still extremely frustrating.

I loved making the filling because it smelled sooo good. But pureeing and mixing it in the food processor was a challenge. I ended up having about five cups of pureed pumpkin, and I think the food processor only holds six, so after I had added all the ingredients (molasses, cornstarch, eggs…), it was very close to overflowing. I was afraid that when I put the lid on top that it would. But it didn’t! At least, not until I turned it on. But that was because the lid wasn’t screwed on tight enough. You should’ve seen how messy the kitchen was.

I’m so glad I finally got to make this pie. And my parents were out at dinner the entire time, so my mom didn’t help me at all! lol I think this could be one of my greatest accomplishments (not even getting into college beats this haha ;)). Now we just have to see how it tastes. Fingers crossed it’s good!
